HEIRLOOM CULTURE, CONTINUOUS BREW
All our kombucha is brewed in house using our own heirloom Jun kombucha culture. The continuous brewing method is a traditional brewing technique where a portion of each batch is saved and used as the starter for the next batch. We have been brewing with the same culture for 10+ years.

Jun is brewed from 100% honey in open-top tanks using a naturally occurring mixed culture of bacteria and yeast.
Unlike industrial booze that relies on hyper controlled environments and a single yeast monoculture, Jun fermentation allows all of the biological processes to take place that naturally happen along side the alcoholic fermentation process.
EVERYONE'S INVITED
Naturally occurring wild probiotic bacteria like Acetobacter and Lactobacillus produce tasty organic acids that are naturally in balance with the alcohol produced by yeast.

We've been using the same Jun culture continuously for over 10 years and hundreds of batches. Gifted to us by a friend, it's the same culture we used to brew our first batches originally in our home kitchen.
