Jun kombucha is booze the way nature intended. Jun is brewed from honey in open top tanks using a naturally occurring symbiotic culture of bacteria and yeast. Unlike industrial booze that relies on hyper controlled sterile environments and a single yeast monoculture, Jun fermentation allows all of the biological processes to take place that naturally happen along side the alcoholic fermentation process.

Probiotic bacteria like Acetobacter and Lactobacillus produce tasty organic acids that are naturally in balance with the alcohol that occurs from wild yeast.

Our jun culture is an heirloom. We've been using the same culture continuously for nearly 10 years and hundreds of batches. Gifted to us by a friend, its the same culture we made our first home brew batches with originally in our home kitchen.
